Hard to believe that the meat nerd herself ran out of quality meats, but she did :) I did however have some great, pasture raised eggs in the fridge and some veggies, so I got creative with what I could find. Ended up making a sweet potato pancake (just eggs, potato, ground turmeric + coconut oil, so not really a pancake:) with a nice, fatty raw kale and spinach salad and a poached egg on top. I don't have any specific measurements, only ingredients. Hopefully it will inspire anyways.
Simply roast the potato in the oven at 350 for about an hour depending on size. I just put it in as it is, and sort of wait for the sugars to start "oozing" out. Let it cool off completely. Cut the potato in half (I did 1/3, mine was huge) and put in a blender with ground turmeric and 2 eggs. Cook the pancake in coconut oil, add some salt and pepper.
For the kale salad I simply chopped up raw kale, spinach, some parsley, scallions, garlic and grated a little fresh ginger. Then I squeezed some lemon juice over it, and blended with some of my favorite Primal Mayo, a little Dijon mustard and some mashed up avocado. Salt and pepper. Serve on the pancake with a poached egg, or as many eggs as you want.
