Bison With Lemon & Garlic

Blog is back! Can't guarantee I'll be super consistent, but I will do my best. I am cooking a lot these days, for myself and for clients, so figured I might as well post some recipes here. This was awesome, made these patties this week with ground bison. Since I'm currently on a serious keto-grind, I'm staying on the lower end of protein intake (reason why they're tiny tot sized), and I ate them with my favorite fat-addition in the world, Primal Kitchen's Chipotle Mayo, and some asparagus on the side, drizzled with their Avocado Oil. Full for dayzzzzzz.


8 Baby Patties

  • 1 lb ground bison
  • 1 garlic clove, crushed and minced
  • 1 tbsp dijon mustard
  • 1/2 cup chopped parsley
  • 1 lemon, zest and juice
  • Kosher salt
  • Grassfed butter, use enough to make you a little uncomfortable

Start by turning the oven on 400, then get a bowl out. Mix all ingredients together and form 8 patties. Sprinkle kosher salt on both sides. Melt butter in a pan and give them little suckers a nice sear on each side. Put on a sheet tray and finish in the oven for about 15 mins. Done! Super super easy.
